Enjoy the Hot Ginger Chicken Soup with Vegetables in a Cold Day

Chicken soup is healthy and delicious to eat. It is more tasty and delightful in the cool winter nights as compared to the scorching summers. There are different chicken soup recipes, but when none can be compared with the lip smacking ginger chicken soup recipe with vegetables. This soup is irresistible and one can have it endless times. It is easy to prepare in less than an hour. The main ingredients are

  • 2 tbsp olive oil
  • 3 cloves garlic, chopped
  • 1 small red onion, thinly sliced
  • 2 32-ounce containers low-sodium chicken broth
  • 3 tablespoons ginger grated fresh ginger
  • 2 medium carrots, chopped
  • 1 medium turnip, peeled and chopped (1 1/2 cups)
  • 2 medium parsnips, chopped
  • 1/2 cup frozen peas
  • 2 stalks celery, thinly sliced
  • 1/2 teaspoon salt
  • 2 to 2 1/2-pound chicken
  • 4 biscuits
  • 4 scallions, sliced

Procedure:
  • Take a large pan and heat oil in it over medium flame. Add onion, ginger and garlic, and cook for 2 minutes.
  • Add the chicken broth. Stir in the carrots, parsnips, celery, turnip and salt. Bring to a boil. Reduce the heat to simmer until the vegetables are soft.
  • In the meantime, use a fork to shred the chicken meat, discarding the bones and skin.
  • Add chicken, scallions and peas to the pan and cook for 3 to 4 minutes until heated through.
  • Your chicken soup is ready. Serve it with biscuits.
