Enjoy the Delectable Cashew Chicken Stir Fry Recipe with Rice

While making this scrumptious dish, the hardest part is keeping the cashews in the closet. My husband and my two little kids love them. It is really difficult to resist yourself from eating cashews. I am sure that you would also agree to it. The cashew chicken stir fry recipe is easy to make and will be ready in less than 30 minutes. 

The main ingredients required to serve for four people are 2 cups chicken soup (divided), 1-1/2 cups cashews, 1/4 cup cornstarch, 1 cup fresh or frozen snow peas, 3 tablespoons soy sauce, 3 cups broccoli florets, 1/2 teaspoon ground ginger, 1/2 cup chopped celery, 1 pound boneless skinless chicken breasts, 2 garlic cloves (crushed), 1/2 cup thinly sliced carrots and hot cooked rice. The procedure to make this recipe is as follows:

  • Take a pan and heat 3 tablespoons of chicken soup in it. In the meantime, stir soy sauce, ginger, cornstarch and remaining broth till it gets smoothened. Keep it aside.
  • Add chicken to the pan and stir on medium heat till the chicken is no longer pink i.e. for about 3-5 minutes. Empty with a slotted spoon and keep warm.
  • Mix carrots, garlic and celery to pan and cook for 3 minutes. Now, add peas and broccoli and cook for 4-5 minutes until crisp-tender. Mix soup mixture as well as chicken in the pan and stir-fry for 2 minutes. In the end, add cashews.
  • The recipe is ready now. Serve with rice to enjoy the delicious recipe.
